Ingredients
- 12 dried dates, pitted
- 1 cup Raw Macadamia Wholes, ground into meal
- 1 tsp vanilla extract
- 1/2 cup shredded coconut
- 1/3 cup coconut oil
- 1/3 cup cacao powder
- 1 tbsp honey
- 1/2 cup extra coconut for rolling
- 1/4 cup extra cacao for rolling
Method
Soak dates in a bowl of water for 1 hour until softened. Drain.
In a food processor, pulse the macadamias into a meal. Add the dates, vanilla, shredded coconut, coconut oil, cacao powder and honey and pulse until the mixture comes together.
Roll mixture into balls, before coating in extra cocoa powder or coconut.
