Janelle’s Secret Nutty Caramel Slice
Ingredients
Base:
- 200g Butter
- ½ a cup of cocoa
- 2 cups of brown sugar
- 2 eggs, lightly beaten
- 1 and a ½ cups of plain flour
- 1 teaspoon of vanilla
Filling:
- 120g butter
- 2 x 400g cans of sweetened condensed milk
- 4 tablespoons of golden syrup
Topping:
- 120g butter, melted
- 2 tablespoons of golden syrup
- 1 cup of coconut
- 1 cup of shredded coconut
- 2 cups of chopped macadamias
Method
Base:
- Melt combined butter and cocoa in the microwave, do not boil. Stir until smooth.
- Add sugar to the butter/cocoa mixture and stir until dissolved. Microwave mixture for one minute.
- Add vanilla, egg, and sifted flour to the mixture.
- Press over the base of a greased pan. Bake in a moderate oven for about 15 minutes or until lightly browned.
- Spread hot filling over the hot base, sprinkle with topping. Bake in a moderate oven for 15 minutes or until browned. Cool in the pan.
Filling:
- Combine all ingredients in a medium heavy-based pan, sit over heat until the mixture boils, simmers, and continues to stir for about 8 minutes or until the mixture is golden brown.
Topping:
- Combine all ingredients in a bowl and mix well.
