Janelle’s Secret Nutty Caramel Slice

Ingredients

Base:

  • 200g Butter
  • ½  a cup of cocoa
  • 2 cups of brown sugar
  • 2 eggs, lightly beaten
  • 1 and a ½ cups of plain flour
  • 1 teaspoon of vanilla

Filling:

  • 120g butter
  • 2 x 400g cans of sweetened condensed milk
  • 4 tablespoons of golden syrup

Topping:

  • 120g butter, melted
  • 2 tablespoons of golden syrup
  • 1 cup of coconut
  • 1 cup of shredded coconut
  • 2 cups of chopped macadamias

 Method

Base:

  1. Melt combined butter and cocoa in the microwave, do not boil. Stir until smooth.
  2. Add sugar to the butter/cocoa mixture and stir until dissolved. Microwave mixture for one minute.
  3. Add vanilla, egg, and sifted flour to the mixture.
  4. Press over the base of a greased pan. Bake in a moderate oven for about 15 minutes or until lightly browned.
  5. Spread hot filling over the hot base, sprinkle with topping. Bake in a moderate oven for 15 minutes or until browned. Cool in the pan.

Filling:

  1. Combine all ingredients in a medium heavy-based pan, sit over heat until the mixture boils, simmers, and continues to stir for about 8 minutes or until the mixture is golden brown.

 Topping:

  1. Combine all ingredients in a bowl and mix well.
